Is a flex sensor analog or digital?

A flex sensor that is placed on a hinge or flexing joint or similar (like an elbow, finger, or robotic arm actuator) outputs an analog signal and usually required conversion through a device like and Arduino through its analog pin(s).
Analog to digital conversion is required so that the changing voltage values due to bend, will be in a format (digital) which the software can use.
